Should I be uninstsalling previous Java updates?

Yes everything but the newest Java 6 update 10 should be removed. As I understand it starting with v10 Java will now install over itself and therefore the need to manually cleanup after it. I have always been removing the old versions before installing the new ones that way it seems to reduce problems with corrupted java file on the new install.

Since version 1.5.06, the installation of a new version will prevent the bad guys from calling up an old version for exploitation via your browser. But still, might as well nuke 'em.

Bigger picture: do you actually need Java for anything? If not, uninstall all versions until such time as you do need it. The bad guys can't exploit something that isn't there.

I run the script block add-on for FF.

That's fine, I do likewise with IE's security zones. But as a best practice, removing stuff you have no use for is still a good move :) If you do have a need for Java, then sure, keep the latest version installed.
