I would prefer to have a single 8' wood shelf in the garage, but i'm worried about the wood warping over time.

Is it better to go with a two 4' boards, or just get the 8' and hope it doesn't warp?

aka Particle Board?
8' length of any material is going to warp under weight unless there are cross brace underneath to take the weight.

IMHO, metal rack is the way to go, or heavy weight plastic.

I used to use 2x12's for garage shelving. As long as you brace it appropriately, it's fine.

If you're gonna load it heavily, use a brace every couple of feet. If you're gonna load it lightly, a brace every 4 feet should suffice.

The metal "L" brackets are ok for light loads,

but for heavy loads, you'll need something a bit more substantial.

I recommend plywood over solid wood for the shelves. It is less prone to warping.

if you mean sagging, then a piece of plywood or hardwood would be best. MDF/OSB will sag faster. Support every 2' with a bracket.

Make it as long as you want, just put braces at every stud. I'd go for the 500lbs capacity ones, just because I like to over do things. :p Mind you even the 100lbs capacity ones can hold quite a bit. It's not like you're storing dead bodies on those shelves. Those go in the freezer.

We actually used old hollow core doors at one point for shelves just cut em half put the cut side towards the wall.
