I think its called sheet music, the kind of thing you look at when you are playing piano, and its got all the symbols on it?

Not exactly.. In a work with multiple pieces, the score is the sheet music with all of the parts written down.

A score is sheet music, and I guess you could say that with a piece with only one part, the sheet music would technically be the score, but sheet music is not always a score.

Nah I'm thinking about taking piano classes next semester and i've gotta sign up for my classes and was looking around. I might do it, iunno. lots of good music I'd like to play on piano

I say go for it. Learning piano is a great springboard to learning other instruments, and has the benefit of teaching you both bass and treble clef.
