That's only some sharks. Many of the reef sharks (white tip reef, nurse, zebra, leopard, bamboo, etc...) can pump their gills just like fish.

That's not an automatic defense...at least not for that animal. In most cases for lower vertebrates and invertebrates (especially aquatic), that I've seen, the first defense is to try to struggle/run. After which they've tired themselves too much to try any offensive-defense. Besides, it can't do much when the octo has its tentacle around the shark's jaw, keeping it shut.

Sharks can get sick. However, they're famously resistant to cancer...it just doesn't occur in them. So they and their immune systems are involved in a lot of cancer research.
