I'll start:

Crock Pot Chili

1.33 lbs ground beef
2 cans pinto beans
1 can tomato sauce
1 can diced tomatoes
1 onion, chopped
1/2 green pepper, chopped
chili powder

Brown and drain beef. Mix all ingredients in Crock Pot, and add chili powder to taste. Cook on low for 8-10 hours.

This is the best chili I've EVER tasted...made it myself last week.

I don't have the recipe offhand, but it involves a roast, carrots, potatoes, onion soup, onions, etc.

I make lots. Some quickies:

1 pork roast
prick entire roast with whole cloves every 1-2 square inches or so
rub down with a little pork seasoning
fill crocker half way with apple cider
dash of cinnamon
cook on low until tender, 6 to 8 hours for thawed roast on low

1 beef roast (fatty cuts okay even for low cook)
rub down with johnny's
make bed of chopped white onions and quarter red taters
add bottle of beer, Henry's special reserve or NW trail works nice
cook on low until tender, depends on cut and size

1 corned beef brisket
put in crocker and fill to top of beef with water
add corning seasons, 2 bay leaves, 2 cloves garlic, half an onion
cook low 8-10 hours

3 cornish hens
bed with chopped celery in crocker
stuff each hen with minced garlic (2 cloves or so) a couple lemon slices and some fresh chopped thyme
add remaining chopped thyme to taste on top with lemon juice and garlic (save some lemon slices for garnish)
cover with sliced toasted almonds
cook 6 hours or so on low, again depending on size

1 whole chicken
3 or 4 cloves garlic
juice from a large lime
fresh rosemary cuttings
salt/paper to taste
bed with quarter potatoes is optional
cook 6-8 on low or until tender

These recipes are all mine and are in basic form, add spices or seasonings to taste and cooking times vary on high or with different size crockpot.

Crock Pot Beer BBQ:

2-3lb beef roast
1 bottle of quality beer(I use newcastle)
1 bottle of ketchup
1/2 cup of brown sugar

Mix up the ingrediants and put in the crock pot. Add the roast. Cook on low for 6 hours. Shred the beef and cook for another hour.

Spicy Beef Strips:

1-1.5lbs round steak, bottom round, flank. Some sort of lower grade meat, the crock pot makes it nice.
1 Clove of garlic
1 tsp minced dry onions
1/2 tsp sal
cayenne pepper to taste
1/8 tsp chili power
1/8 tsp cinnamon
1/8 tsp ground celery seed
1T mustard - liquid mustard, of your choice.
1 Bulion cube per 1/2 cup of water. Bascially, you need to make a strong beef broth. The amount you use is up to you, but you generally want to have enough so when you put everything in the pot, the broth will cover everything.
I typically use ~1.5-2cups of water.

Cut the beef into strips. 1-3 inches long, 1/2inch thick, brown them in butter. Then place in the crock pot.
Mix all other ingredients together in separate bowl. Then pour mixture over the beef and mix in well.
6-8 hours on low.

You can add in other things such as onions, peppers, whatever it's your call.
Serve over cooked white rice.

1 turkey breast (6 to 6 1/2 pounds)

2 t. vegetable oil

Salt and black pepper, to taste

1 medium onion

4 garlic cloves

Rinse the turkey and pat it dry with paper towels. Rub the turkey all over with the oil. Sprinkle the breast lightly with salt and pepper to personal preference. Place the breast, meaty side up, into a 5-quart slow cooker.

Peel the onion, cut it into quarters, and place the pieces around the edges of the pot. Peel the garlic cloves and place them around the sides of the cooker. Cover the cooker and cook the breast at low for 7 1/2 hours, or until a meat thermometer registers 170°F.

Remove the breast from the cooker and let the bird stand at least 10 minutes before slicing. Discard the vegetables in the cooker.

Serves 6-8.

I made a variation using a package of dry vegatable soup & it turned out great.

Here's a simple one:

2 (10.75 ounce) cans condensed cream of mushroom soup
1 (1 ounce) package dry onion soup mix
1 1/4 cups water
5 1/2 pounds pot roast

In a slow cooker, mix cream of mushroom soup, dry onion soup mix and water. Place pot roast in slow cooker and coat with soup mixture.

Cook on High setting for 3 to 4 hours, or on Low setting for 8 to 9 hours.

This is what I'm making today:

Several cans of canned meat chili, store brand
Bags of shredded cheddar

A couple bags of chips, to dip.

I've got people running in and out all day and it's something to snack on when they get cold and hungry.
