Share your chili recipes...

1 lb hamburger
1 small onion (chopped)
2 cloves garlic (minced)
1 green bell pepper (chopped)
1 pkg red kidney beans
2 16 oz cans tomatoe sauce
Chili Powder
Hot Salsa
1 pkg Jiffy Corn Bread Mix

Wash and soak beans over night in bean pot. Drain soaked beans, fill with clean water and let beans cook for a couple of hours until tender (directions are on bag for how long).

After beans have cooked drain out the juice, but leave about half (give or take) in for flavor. Brown hamburger, onion garlic, peppers. Drain out grease. Add sauce to meat then mix the chili powder with a little bit of water and add to meat. Pour sauce into beans and stir. Sprinkle some more chili into mixture and add a little salsa to taste. Let simmer for about an hour & a half - add water if needed (if it starts to look too thick). Stir now and again so beans don't stick to bottom of pot.

Make corn bread following instructions on the pkg. (I usually add a little bit of sugar when mixing).

Chicken/Turkey but thats meat, and honestly if you dont want meat I dont know what you would sub meat for other then meat. There in no sub for meat. Either you have meat or you dont, and since Im not vegetarian I dont know what fake meat tastes like or could recommend in place of good old dead cow or pig for in mine I use ground beef and hot spicy breakfast sausage.

I couldnt eat it if it didnt have meat, gotta have the dead animals in it to be called Chili IMO.

I vary it, but this is one that always worked well for me:

1 large onion, chopped
1 can tomato paste
2 stalks celery, diced
garlic, chopped (i use half a head, use whatever you like)
habanero, chopped (whatever you can handle)
1 lb ground lamb
1 lb ground beef (lean, the lamb will supply the fat)
1 bottle of any beer you like to drink
Salt
Pepper
Juice of a lime
Cilantro
Touch of cinnamon
(all to taste, and definitely experiment with the seasonings, this is a good base recipe)

On med-high, add some peanut oil to a pot and cook the celery, habanero, garlic, and onions until the onions start to turn translucent. Don't burn the garlic. Add the tomato paste and combine. Cook it a little until it combines.

Now add the meat and brown it. Don't drain off the fat (unless there's a lot, but remember, lean beef!). Once everything is combined and browned, add the beer and seasonings. Lower the heat (low/med-low) and simmer for as long as you want. It's better the more you let it cook down.

When you serve it, toss in some dark chocolate in the bowl and melt it in. Not everybody likes it, so I don't put it in the base recipe, but it's pretty good to me. Worth a taste at least once.

This recipe's a good base to expand on too. I use pinto beans sometimes, corn other times, vegetables that I have to use up, etc. Just remember that it'll be acidic with the tomato paste and the lime, so adding some starch or serving over rice is really good too.

EDIT: Funboy's post reminded me. Hot breakfast sausage is a great replacement for the lamb. Just hold off on salting it until you taste, as most of the stuff out there is pretty salty.

Do you eat fish? I've substituted firm white fish like Cod, Haddock, Talapia, etc before. It's pretty good. The base recipe I posted would be a good place to sub fish for meat, as it's already acidic and goes well w/ the lime and cilantro.

My ex-wife made chili like that, but added several cans of Hot and Spicy V-8 juice in cans in place of the water, a ton of black olives, and a small bottle of jalapeños... A good way to miss work the next day. :eek:

My wife make chili all the time with veggie crumble (simulated meat, vegatble protein)

mine is like a chili bean feast and I love it!


1lb Steak mince
1 can Red Kidney beans
2 cans pinto beans
2 cans baked beans
2 cans chopped tomato
3 Birds eye chillis <-- more if you can handle them


Chuck an onion in there when browning the meat and any other spices you wish toward the finish.

2 cayenne chilis
cumin, black pepper to taste
give the chilis and garlic a good run in the food processor. brown the beef, add chopped onions, the chilis, garlic, and tomatoes. simmer. add some beer if you like. when it cooks down a bit, add the beans, then let it cook down a little more.

I'm assuming substitute the meat for very firm tofu?
