Well the wife and I just picked up a 6.5qt crockpot from a deal I saw over on SD for $20 at Frys and I'm itching to make some home made chili, only problem is I've never used a crockpot or made chili :p

FWIW each year here in Atlanta they have the Chili Cook Off at Stone Mountain and I do know that I do not like smoky chili at all.

I like it with a little kick but not to hot and even a little sweet is ok.

Also has to be chunky and thick, if I could eat it with a fork that'd be perfect.

All that considered, what are some of your chili recipes?

Checked!

Looks damn good.

Guess that'd work just the same in a crockpot...

Might be giving that try this weekend :D

Well, except for the mushroom :p

it's just a standard chili pretty much... nothing fancy... i can't take credit for the recipe :)

try the mushrooms in there! :p

edit: oh yeah and some of those ingredients could be better quality. ie. no-name mushrooms... not that it matters a LOT but i like to at least go middle-of-the-road stuff as opposed to no-name, as long as the price is comparable.

Usually just brown some ground chuck and then toss that in with some pinto and kidney beans, stewed tomatoes, a chopped up onion, chilli powder, cayenne and red peppers and some cumin.

Let it cook overnight, but it stinks up the whole house...

2lbs ground beef
4 cans of rotel, varying heat
chili powder
minced garlic
garlic powder
lawry's salt
black pepper
cumin
oregano

All spices added as needed to taste.

Every once in a while I add a can of black beans, but not very often.

Mine isn't complicated at all.

I just use this 2-Alarm chilli mix
I only use half of the chili powder (the non hot stuff) and save the salt for other things.

I follow the directions and add the mix above to this----

Brown 1.5lb ground chuck or better
1lb can of pre seasoned hot chili beans (they are'nt hot like the label says, never are)
2x cans (not sure of size... 16oz?) of Hunt's Stewed tomatoes

Let this simmer in the big crock for at least 8 hours (adding a bit of water when needed), and that's it.......... Tastes Great, Real Filling!

Here's what I did last time... I hope I remember everything... I kinda played it by ear when I made it :)

2 lbs ground beef... browned
1 28oz can Tomato Sauce (not spaghetti sauce)
1 28oz can Diced Tomatos (w/juice)
1 12 (14?) oz can Chili Beans
1 small can (forget the size) tomato paste
1 12 (14?) oz can low sodium Beef Broth
Garlic to taste
Chili Powder to taste
Cumin to taste
Cayenne (sp?) Pepper to taste

Mix all together in the crock pot and let it go on Low all day... stirring occaisionally.

It turned out pretty thick... but you could leave out the beef broth and it would be even thicker.

If you wanted it chunkier... use stewed tomatos and cut them to size.

Now you've got me wanting Chili again... maybe I can use the Super Bowl as an excuse to make a pot. :)

2lbs of meat (preferably elk or deer)
1 onion
2 cans of Pinto Beans (chili without beans is not chili - it is sauce)
1 15oz can of tomato sauce
1 15oz can of diced tomatoes (I get the kind with chilis mixed in)
Chugwater Chili seasoning (order online, the best there is IMO - I can never get it as good by doing the seasoning myself)
15oz of water
Extra peppers to spicen it up more.

Brown meat together with the diced onion, and season however you want (I usually add a little garlic and some hot chili's). Mix in tomato sauce, tomatoes, chili seasoning, and water. Simmer for 30 minutes. Then add the pinto beans, and return to simmer. Serve when ready.

I am actually in the process of making myself some of that stuff right now, should be ready in 20 minutes or so.

mmmmmmm chugwater chili.... ;)

That looks very good, but a little runny. I'd eat any Chili right now........ Even chili with Naga Jolokia peppers in it!

PS: I'll be growing THESE peppers this year. Hottest pepper in the world now. I know they're expensive seeds, but I'm not buying fake ones off ebay!

There's a guy on You Tube eating the Red Savina (previous World record for a hot pepper) and he says he'll be trying a Naga when the ones he has ripen.

REAL Texas Chili doesn't contain beans...so don't try to enter any of their contests with them in the pot.

Personally, I prefer a mix of great northern, light red and dark red kidney beans....
