Settings not being retained after restart

I'm trying to get a Win2k system going here at work. It's a P3 500, 128MB RAM. It seems that after I get Win2k installed, none of the settings "stick", so to speak. I install the driver for the NIC, do a few things on the net, reboot, and the NIC shows up as "Ethernet Controller" in the Device Manager with no drivers installed for it. I change the resolution from the awful 640x480 to 800x600, reboot, and 640x480 is back again. I've tried different hard drives and installations as well. Has anyone seen this before?
