setting up a mp3 server ... ?

I don't know about those ones, but check out RIMPS on sourceforge.net .
It's what I use. It doesn't allow you to change the bandwidth of the stream though.
Meaning when you play a 128Kb/s mp3 you ned that much bandwidth to listen to it.

Although one thing it has over most is that you create playlists and play, on demand, anything you want.
It takes a while to get it setup, but once it's working it's great.

I've had good luck so far with Icecast. It took me a while to get the LAME reencoding stuff compiled and working the way I wanted. There isn't much documentation around on it though there are a few forums out there. Icecast works great with multiple streams at different bitrates...

If you had a windows box and can run shoutcast on it, you're probably going to have an easier time doing that just due to the immensely larger base of help/forums for shoutcast. I don't have any experience with shoutcast under linux.

I have a icecast server feeding from darkice converting live audio (radio card) to MP3 and streaming it on a P233 and the box is usable for other things and has been running for months continuously without problems.
