Check this Angelnetworkz special going on right now. I've been happy with them also.

I'm new to the whole dedicated server thing, do I actually get root to do whatever i'd like, including setting up virtual servers with apache, mysql, postfix w/spamassasin etc?

Yes there's Managed.com but overall they're not as good as SM.

If you go through Angel Networkz then I would highly recommened trying a server at managed.com. Very reliable support and a pretty good network.
