Server upgrades

We have a 3.2 single-core Xeon server, with 1GB of RAM managing about 15 clients.
They run a variety of apps: CRM, Accounting, Stock and Billing, Backup, File Server, Printing, Sharepoint, Monitoring, etc.

I want to know if the server is being maxed out, so I need some kind of monitoring app that I can leave running for about a week and create a report to see if I need extra RAM, an extra CPU (I can add another Xeon) or a faster hard drive.

Windows built-in monitor is a bit complicated for me, I don't really know how to read it. That might seem amateur, but I need something that can be easily understood.

The thing is running Windows Small Business Server 2003 SP2.
