The unit is already spoken for and the buyer will be picking it up tomorrow. If I format the hard drive am I cool as far as preventing him from being able to recover my gamertag or personal info?

Should be. If you had a Live (gold) account, call MS and make sure you end that subscription.
 
You can format your HD...you could do it a few times to be safe...but it'd be pretty hard for him to recover your gamertag without your password...and email tied to it.
 
There should be an option to format your 360 to factory fresh outta box state, just like a Wii and PS3. When I sold all 3 systems, I did the factory restore option. Quick and painless.
