I've got a bunch of domains that I am not using and I was hoping someone could enlighten me as to how exactly one physically sells a domain to another person and where one would go to do this.

You can sell the domain in virtually any manner you choose. Simply change the registrant information, and transfer the domain to whichever registrar/account they desire. Each registrar has a procedure in place to do so.
1) You market and advertise it.
2) Someone buys it.
3) Once you have securely received guaranteed funds.
4) Get the new owners name, address, phone info and transfer the domain to them.

There's a way to transfer your domain with your registrar. It's easy... I bought a domain a while ago, then some guy contacted me a year later saying he would like to have it back... back? yeah apparently he let it expire and I just happened upon it in the downtime. So I sold it to him for $400.
