seeking MB advice for a new Intel QuadCore build

I'm starting to acquire parts to put together an HTPC for the office.
My main goals are:

1. A system that can run Vista with 4 DVI/HDMI outputs (I currently have 4 monitors on my desk running on 2 machines and want to be able to run one machine that can power all 4 monitors with separate signals. I'm not worried about games...just for watching TV and movies, internet surfing and word processing, etc. I supose if there is a reliable card with 4 video outs I could use that rather than dual cards.

2. If possible, it'd be a kick to be able to run the system as a hackintosh.

Any suggestions for MB and video cards to go with this? I assume I should be looking for a pair of the same card...probably some mid-level nvidia.
