the pan is as hot as you can get, once you put something in it the wok loses a small amount of heat, but not much.

Low quality meat? I lived with a guy in college who consistently cooked chicky necks for his gourmet meal. Name one mainstream stirfry dish that includes a quality meat via a fast cook method without being killed by sauce?

Maybe you go to the places like I see around town that feature $1.39 Chinese food and then $2.75 for 2 choices + rice. MAYBE then you get places that are loaded in oil and grease and you can also see the MSG on them.
Me? I spend a good $25 - $30 on 3 dishes of Chinese food from places that have a line out the door with ASIAN (mostly Chinese) people waiting for.
If you're Chinese and you know good Chinese food, you will be getting the good stuff.
I know how to cook too, maybe not that damn well, but I can make a few decent dishes and no I don't need to load down the oil and MSG.
And if you want to make Chinese food sound unhealthy, why is it that you don't see that many fat Chinese people and more so fat white people?

I'm white. if I go to an Asian restaurant and see other white people, I usually leave. Only good Asian place is when all the customers are Asian.
