Will the Seasonic Prime PSU's work with the upcoming Threadripper motherboards like the Asus X399 Zenith Extreme?
 
Virtually any modern ATX PSU will work with virtually any modern ATX motherboard. So, yes. (That's what the ATX standard is for - to ensure compatibility.)
 
Thanks, The board I was looking at had a 24-pin and two 8-pin power connectors. I'll have to double check, but I think I'd have to use a 6+2. I only have one 8-pin cable.
 
All modern ATX boards and PSUs use a single 24-pin ATX main power connector, so that's not something you need to check when choosing a board or a PSU.

You can't connect a 6+2 pin PCIe cable to an 8-pin CPU power connector. PCIe cables are for graphics cards, while the CPU power connector requires a 4+4 pin EPS cable. (Note: EPS is often just referred to as a CPU connector or cable.)

Two CPU power connectors on the board is certainly unusual. I'm guessing it would work fine with just one of them connected, and the second connector is mostly for overclocking purposes and additional stability. Seasonic Prime Titanium 850W, however, has two 4+4-pin CPU power cables connectors, as do all other Seasonic Primes apart from the Gold and Platinum 650W units.

Even if you have a power supply with just one CPU power cable, you can get another one from Molex connectors using an adapter. A single Molex can supply up to 11A of +12V current, which is 132W - should be more than enough for a supplementary power connector.

My R7 1700X is listed as a 95W TDP part, and it gets up to 210W full package power draw when overclocked with raised voltage.

Threadripper is listed as a 155W TDP part, so it will definitely need the additional 8 pin connector. Maybe see if you can buy an additional 8 pin cable from Seasonic.

There is no need, Seasonic Prime units (apart from the Gold and Platinum 650W) already have two EPS connectors, as I posted above.
