What is the best way of taking pictures indoors? because when I use auto with flash, it makes background very dark. Night shot mode w/o flash kinda makes pictures blurry.

Is image stabilization turned on? If you have a tripod or solid surface to set it on, try a longer exposure (slower shutter speed).

Otherwise, you're simply going to need better lighting or live with the built-in flash making the background dark. That is a trade-off of having a pocket-sized camera.

steady hands. I thought the IS would help me with the flash on slow-sync mode. unfortunately, it did not (SD800IS) 🙁 What I really wanted was full manual controls

IS on these cameras is a gimmick. They make you believe that a monkey hanging upside down from its tail while scratching it's ass with one hand could take blur-free shots with IS on (well not really, but you get the idea). The only time I've noticed the benefits of IS was at the far telephoto end. I take better flash-less shots with my gf's F31fd than my S3.
