Scrapple is typically made of hog offal, such as the head, heart, liver, and other scraps, which are boiled with any bones attached (often the entire head), to make a broth. Once cooked, bones and fat are discarded, the meat is reserved, and (dry) cornmeal is boiled in the broth to make a mush. The meat, finely minced, is returned, and seasonings, typically sage, thyme, savory, and others are added. The mush is cast into loaves and allowed to cool thoroughly until gelled. The proportions and seasoning are very much a matter of the region and the cook's taste.

Commercial scrapple often contains these traditional ingredients, with a distinctive flavor to each brand. A few manufacturers have introduced beef and turkey varieties and color the loaf to retain the traditional coloration derived from the original pork liver base.

Vegetarian scrapple, made from soy protein or wheat gluten, is offered in some places. It is seasoned to be much sweeter than typical meat scrapple.

I had Scrapple in PA. It smells like the most wonderful item you will ever eat. The taste was very disappointing. My friend said it was bad Scrapple and told me I should try it if I go southward.

it's nice to wash that down with some Snapple too. mmm it's a good meal I enjoy quite often. I call it Scranapple. I thought of calling it Snacrapple, but that just reminded me of how much I despise the meal my captors feed me.

Scrapple is awesome when it's fried and served with Apple Butter. Hmm... now that's good Pennsylvania Dutch eatin'!

Geez... next you'll be telling us that you never had fried squirrel or rabbit growing up. How sad!

A traditional breakfast food in and around Philly. Not exactly anything to write home about. Because of the corn meal mush added, I guess, most decent sausage (made essentially of the same "offal", you know) tends to taste much better.

I saw something about scrapple on the Travel Channel. While that sounds nasty to me, something that is quite tasty and somewhat similar is Mannish Water. It is a Jamaican soup that is prepared by boiling the head of a goat and other goat parts and obviously adding other ingredients. If you are ever in NYC or a place with a good sized Jamaican population, find a place to get it- it is much better than it sounds. One of the best soups i have eaten.

I learned to love scrapple long before I was old enough to care what it was made from. Count me in the "I eat that shit for breakfast lunch AND dinner" section. :)

yeah, head cheese is fucking gross, unlike its name cheese, which is delicious, which also infers that cheesecake is a pie.
