sbs 2003 backup routines?

currently i have sbs 2003 backing up on another hdd on the same computer. I'd like to get an externel hdd then take it home but i dont see how i could get that to work well. Wouldn't that require some GUI interaction? I need something automatic as the server is setup where there isn't a keyboard+mouse+monitor. Also, i leave the office at different times everyday. How can i ensure i am getting the latest backup and not yesterdays?
