Sauerkraut roast recipe?

When I was young, my great grandmother used to make a saurkraut roast. I believe it was a pork roast of some sort, and she also had sausages and a few hot dogs in for the kids.


I'm trying to come up with something similar to this..


The roast fell apart similar to roast beef

Unsure of sausage type, but it seemed like it had a tougher skin than kielbasa.

Required a can of beer

Had to cook for minimum 3-4 hours



Any tips for me?

My mom makes sauerkraut roasts from time to time. The trick seems to be putting a bed of sauerkraut down, putting the pork in, covering it with more sauerkraut, then distributing the beer evenly around the pan.

The sausage casings your Grandma used were probably real intestines and not the artificial stuff used today.

step 1: make a pork roast
step 2: throw all the sauerkraut in the garbage and enjoy your roast with some gravy or something.

;)
