for my next build i've got pretty much everything except for the HDD. right now I have an 80gb IDE drive and its working good but are the SATA drives better? are their any disadvantages to having one rather than an IDE? I have no intentions of doing a RAID array so thats not a factor.

If you can afford it you might want to pick up a SATA WD Raptor. A bit pricey, but fast. Otherwise, upgrading to SATA over IDE won't benefit you much.

I would say wait a few for the new NF4 and get a SATA II drive , I dont now if there are any test on the new SAta 2 drives but they sound impresive. Another plus is better air flow since the cabels are much smaller than IDE , it wil lgive you better cooling to a point.
