In my opinion that is a sophisticated palate.

I can't believe Food Network won't let him cook rabbit nor tripe. I love tripe. As for rabbit I tried to substitute rabbit for chicken in a Paella once but it didn't work as well as chicken does in that dish. But I had to try. I'm sure I'd like rabbit if it were cooked another way maybe so I'll try rabbit again but it was tasteless compared to chicken for that particular dish.

I did make the mistake of telling some ladies that I ate rabbit though. They probably think I'm evil now. *facepalm* They were like "awwwww no you didn't!" I was like hey I didn't kill it! It was already dead! I found it at the supermarket and it looked fresh, I'd never tasted rabbit before and I wanted to try it.

Loved Good Eats. I tried listening to his new podcast though and I really couldn't make it through more than 10 min or so. Instead of friendly, knowledgeable Alton, he came off as more or less a condescending asshole. It may have gotten better as the show progressed, or it may be he is just new at radio/podcasting and trying to find his place in it, but I turned it off.

why wont food network let him cook rabbit or tripe?

People are squeamish. They think rabbits are too cute to kill and eat and they think tripe is gross because it's offal and because they don't know what to do with it to make it delicious. By they I mean the actresses on the Real Housewives, not chefs.


Oh, rabbit is sooooo good in some particular recipes. Makes me regret that I suck at hunting rabbits.

If you don't mind sharing, what's your favorite rabbit recipe?

I use many of Altons recipes, or some version thereof. I love a brined turkey.

What I like about him is he taught not only how but why one would do something in the kitchen. Once you understand a principle you can apply it to many situations.

My problem with Alton Brown is he's not really a chef---he's more of a food hack. He often comes up with over-complicated ways to do simple things, then tries to pass these techniques off on people that don't know how to cook. It's almost like Rube Goldberg cooking :)

Alton brown is great. He may not be a chef (who fucking cares neither am i) but he does come up with ways that make it easy to understand the basics of cooking. NO other show on TV did that.

I don't want to learn how to make huge high end 5 course dinners. I want to learn how to make a basic good meal. Wich i have done with from he show.

I used to love hunting rabbits. We would take .22's and go out into the woods. They are hard little buggers to get.

Rabbit is ok not my favorite meat but good in stew and such

I miss good eats on prime time, it was a great show that taught a lot and is pretty interesting to watch while you're cooking in the kitchen. Now all they have is that stupid shitty ass Chopped competition.

The early days of Good Eats were great, simple explaination. If you compare that to his commentary on Iron Chef America, you get tinges of the Know-it-all-Alton character. I like both, but he needs some comedy or at least a comedic visual aid to really shine on camera.
