Salsa Recipes

I was at the supermarket today and decided I wanted to take things to the next level and make my own salsa. Sure, I could search google for a recipe. Sure, I could check the old posts (example). However, I want to hear any recipes that YOU have for salsa.
 
Boil 8 roma tomatoes with 3 serrano peppers for 10 minutes or so then drain.
Peel tomatoes and remove seeds (they're bitter).
Dice 1/2 large white onion and put in cold water then drain.
Roughly chop 1/4 cup cilantro.
Toss it all in a blender or food processor.
Add salt, pepper, sugar, and an acid like lemon juice or pickle juice.
Blend to desired consistency.
 
here's an interesting one

my wife bought some regular store brand stuff, added Cilantro (I forget how much), put it in the blender...and bam, tasted just like mexican resturant salsa
