I dont know if it belongs here but...what you´d say are safe temps for:

1. Athlon 64 3200+ Winchester
2. Geforce 6800 GS

I need to know because I want to know if Im going too far with OC

Within thermal specifications? 65c for the processor and 100c for the video card, as per amd and nvidia/dell.

Most people will not even get close to the maximum "safe" thermal specifications. A lot of people complain about 40-50s temps as being too high, but the CPU's have no problems running at those temperatures. However, constant high temperatures from both your CPU and GPU can result in high case temperatures which can cause premature hard drive failures if you put a lot of stress on them. This is especially true for RAID arrays since the drive typically tend to run hot when in use.
