I've done a fair amount of homework on setting up SSH, HTTPS Everywhere plugin for Firefox, etc in the search for a reasonably simple and effective way to gain security through unsecure channels like the local coffee shop for instance. I seem to be getting tied up on options and methods and want to put the brakes on for a moment and ask what you'd do to solve this common dilemma? If SSH is the preferred method, can you provide a clear concise and current how to link?

Running Win 7, and before I get hammered, yes, I've googled it well and every page has led me down a road that terminates before all the required bits are in place, leading me here.
