In terms of quality, there's one major seperating point for knives. They're either stamped from a sheet of metal (like this), which uses less metal and is more along the lines of 'mass production' - keeps costs low, etc. And then you have Forged knives, which use a more labourous process but yield a better overall product that costs a fair bit more. For serious cooks (not professional, just people who take it seriously) - it's a pure treat to have some nice knives - but for the price of 1 8" forged chefs knife (about $60), you can easily buy a nice set of brand name stamped knives (like this deal).
Personally, I spent just shy of $200 for 3 knives receintally. For me, it was like trading in an '83 Yugo (turbo even - heh) on an '02 Ferrari 355. Even when I bought my GF a 'cheapie' forged Henkels chefs knife ($25), she took more interest in cooking and absolutly loves the knife. I'd hole-heartidly recomend that anyone who buys this set and is 'curious' about the other side, should go out and spend $12~17 on one of the cheaper forged knives (or better yet, borrow one for a week) just to see.
