Running power supplies in parallel?

After learning how to convert a psu into a work bench power supply, I started to wonder...

Why don't people run two power supplies if they have power hungry quad cores and dual core SLI video cards?

The only thing that would need to be bridged would be the ON signal between the two, right?

Most cases don't fit two PSUs. Also, if you're only running graphics you will want a PSU that works well in that kind of scenario with a 12v crossload, and you probably won't find many cheap PSUs that do.
