The Windows 8 product key is in nvram on the board. Some manufacturers let you see it from the BIOS. You wouldn't have an issue downloading and installing the version of 8 that came on your tablet, if you wanted to go that route.
Well, I've just finished downloading it to my 64GB USB3.0 San Disk Extreme flash drive. There weren't really that many options to be honest so I don't see how I could have gotten the wrong one. Is this tablet really so different just because it's a tablet processor? My only concern is that it won't have any of the Dell software on it. Someone on a Windows forum I frequent offered out to everyone his recovery backup he made for the tablet. I guess I could use that but I have no idea how to install that recovery.

The downloads for your tablet will not help your Windows 8 installation. These are drivers and applications that will help running the tablet at it's optimal.
Some of the drivers might be detected while installing (meaning that they are included in the Windows 8 ISO you burned on the USB flash disk). Others might be needed. Since you decided to sell the tablet you should install the lot. Otherwise if you choose to keep it, install whatever is needed and whatever you are feeling is good to have. Read what every download file does before you use it.

The biggest issue here is, I think the Venue 8 Pro won't boot off a USB stick unless it's on AC power. You might be able to reboot into the UEFI options and try the recovery from there.
This place might help better: http://forum.tabletpcreview.com/forums/dell.1032/
Well, I tried both the microSD card and a USB flash drive via a USB-microUSB adapter and neither shows up in the recovery application.

The UEFI ignores the uSD card.

If you originally made a recovery USB drive using Windows 8.1's built-in app (NOT the Dell app), if you boot into recovery from the Settings app, it SHOULD recognize the drive as a recovery drive.

If not, I can't help, but that forum I linked to should be able to.

What I've got is the recovery folder that another Venue 8 Pro owner made. Do you think that if I put that on the root of a USB flash drive and connect it to the microUSB via my USB-microUSB adapter, it would recognize it?

Maybe. As long as the drive's folder structure is what it should be.

I haven't tried restoring from USB.
