Road trip - one photo per minute?

Is there an easy way for me to have one photo taken per minute on a long road trip? The resolution doesn't have to be great as the final idea is to create a video of sorts.

Attach a webcam to a laptop and dash mount it?

Get a small canon and use the time lapse feature?

any input greatly appreciated.
 
Get a cheap Canon point and shoot supported by CHDK, install CHDK, find or write a script to take a picture at your desired interval. Done.

I did it with my a710 a couple of years ago 🙂
 
One photo per minute is probably too long, because the scene changes too much between shots for it to be a smooth time-lapse. Your best bet is probably to do what that youtube video did, which is to make time-lapse clips to put together showing representative portions of the trip.
