RJ45 - Rewiring for other use

I have additional RJ45 lines that I used for wiring the house. Basically I do not have enough PCs to use all of the RJ45 lines. I know you can use the 8 piece of wires to connect Phone line.

Has anyone use the RJ45 cable for other use ? Like maybe making a serial cable, parallel, USB or even transfer music via some kind of combination of the 8 copper lines.
