RJ11/RJ45 coupler reversing polarity?

So I just installed a Kohler DTV prompt digital shower control and due to insufficient wire length, I had to go to the store and pick up a standard RJ45 coupler (and later an RJ11 coupler after I destroyed the RJ45 one) to extend the wire (unit supports up to 150ft). Anyway I had a hell of a time because while I know the system worked and the wiring was good, the couplers I kept buying weren't comptible. Meanwhile, one of the couplers provided by Kohler (that I was using) I tested it and saw what was going on.

The kohler coupler has it so that when you have to male connectors facing each other, each wire is connected 1:1. Yet on the standard telephone and RJ45 networking couplers, the polarity is reversed if you look at it male end facing male end.

Why is this? Why do telephone and networking couplers reverse the polarity of the wiring? I tried using a telephone splitter jack as a way to bridge the connections and it too had the same problem.
