Ripping audio from Video DVD/CDs

I have:

Sansa MP3 player and a car stereo.

The car stereo can play CD, WMA and MP3.

It also has an input for an MP3 player.

I have some DVD's with music videos and some CD/DVD's with only music.

I would like to rip the audio off of the above disks to use in my MP 3 player and also on my car stereo if this legal.

I was looking at this, the trail version seems easy to use ??

Also, I am not sure what bit rate or format I should use.

I build cars/trucks/engines/transmissions from the ground up and computers.....but I have a hard time with software for some reason.

Could someone help me with a bit of advice please 🙂
