Rice Pudding sooooo goood *drool*

Ok, got a sweet tooth? Want something 'moderately' healthy? Here is a recipe I've used for a while

.75 cup uncooked white rice ( I use parboiled for more nutrients)
2 cups milk
.33 cup white sugar
.25 teaspoon salt

1 egg whisked
.66 cup dried cranberries (you can use raisins too) - I use fresh blueberries sometimes too.
1 tablespoon butter
.5 teaspoon vanilla extract

In a pan, bring 1.5 cups water to boiling. Add rice and stir.Lower the temp, cover and cook on low for 20 minutes.


Now, take the 1.5 cups cooked rice, 1.5 cups milk, sugar and salt. Cook over medium heat until creamy, 15 to 20 minutes. Stir in remaining .5 cup milk, egg and craisins (all mixed together).

Cook 2 minutes, stir constantly. Take off heat and put in butter and vanilla. Stir it around. I like it warm.

I'm not much of a rice pudding fan, but that actually sounds good.

I appericate and enjoy a good rice pudding but my downfall is tapioca.

I will however trying this very-tasty sounding recipe! Thank you! :)

Toss in a handful of quality raisins into the mixture.

Top with a dash of cinnamon and/or nutmeg

Rice pudding exists in a plethora of cultures, in one form or another.
