Ribeye steaks- Just the marbled part and not the eye (*PIC*)

A ribeye consists of a solid center part that looks like a sirlion, plus layers of marbled meat surrounding that eye.

What is those layers of marbled meat called?

I think that in a porterhouse, the smaller marbled side is filet mignon.. Damn.. I need to learn about steak too.
 
hmm porterhouse. yumm. the local butcher sold me 2 good cuts about an inch think for $16 the other day! got them in the fridge hopeing for a nice day to grill them up.


so it is part NY strip? hmm don't see those very often. Only time i see filet mignong (at least not at a butchers that is) they are frozen in plastic. don't think those would be very good.
