Need? No, but I like to put some on anyway. Just make sure you don't overtorque it.
You only really need it when installing steel plugs in aluminum heads.

Some pages say that you shouldn't use it if the threads are plated. Is this true?

I've always just coated the threading with a little engine oil. This has worked for me for the last 10 years with many different kinds of plugs in an aluminum head (actually, two aluminum heads :p).

A little $1 package of anti-seize lasted me 8 set of spark plugs change (4 banger), so might as well put some on.

Yes, but when using anti-seize, you need to reduce the torque spec slightly as the specs are usually set with dry fasteners.
