Replacing Hard Drive Question

I have one HD in my PC and it's running Windows 7. I want to replace it with two HD's in RAID 0. If I make an image of my current HD using Acronis or something, then pull out the drive, then install the two new drives and configure them in RAID through the bios, can I restore the images to those drives OR should I install Windows from scratch?

Normally when I change one drive for another I just do an image restore but since I'm going from one drive to a raid setup, I'm not sure.

As far as Acronis TI 2011 is concerned, a RAID array is simply a lettered drive. Image restoration will work - so will cloning. Good to try that first. A clean install is always available.
