Well, I've interviewed 3 different cabinet makers and one granite guy. Looks like we are going with one who actually works with an Amish family in Indiana. I'm pretty confident he actually works with them and isn't BS'ing me. Some great ideas and the price is very good. Comes out to about $18K installed, using hickory, pocket screws and glue. Only 1/2' plywood box walls instead of 3/4", but it will save be about $5K compared to another guy using 3/4". Also, includes two motorized spice racks that will sit below and to either side of our counter cooktop.
Guy had his laptop, used software to draw out the whole kitchen and gave me several quotes depending on which wood grain I go with. In fact, he included his complete pricing list in case i wanted to make any additions before making a decision.
Lastly, he was the only one out of the three to suggest I contact my insurance company about the water damage. I honestly didn't think much of it, but I called. They came out today (the day after I called), assessed the damage. They included replacement of the damaged cabinets and refacing of all of the rest of my cabinets, complete replacement of all the granite in my kitchen (about 85 sq ft), and repainting of the kitchen and my adjoining two story family room (something I didn't even consider). After my deductible and depreciation hold back, which I get after completion of the work, they cut me a check right there for just under 10K. I'll get another 2K from the depreciation holdback later on. Couldn't believe it. Liberty Mutual Rocks! Now, $12K certainly won't cover the custom cabinets and new granite we were going to get, but it surely helps relieve the out-of-pocket sting we were anticipating.
