If I reinstall a Windows 7 image when I had a GTX680 with a Nvidia driver 344.11 (it was one for the GTX970-980), on the same exact computer except now my video card is a GTX970, will I be able to boot into the O/S or will it be a conflict and I wont even be able to boot into it?

It will boot up and Windows will add the new hardware using the 344.11 driver. After that happens, it is best to download the latest NV driver and run the installer. Choose "Custom" install, and then check the "Clean Install" box. You should be golden after that.
