Recovery attempt off a hard drive?

Situation:

Ladies at church used old hard drive continually against instructions to store data. After 2 months to retrieve, I took them out.

2 hard drives

30gb maxtor
40gb maxtor

I created a striped array WITHOUT FORMATTING or installation of anything, just BIOS level array creation.

Using a recovery program, is it possilbe to retrieve some of the documents and newsletters that are on there?

anyone ever do this?
