Recommendations for storage solution

Ok so here is my little story. I rip or download all my TV & movies now. Up until recently, I've been doing non HD. The 1TB drive I have has been fine. But now I'm doing HD, which is about 4 times larger. I need more space. I bought a 2TB drive already to replace the 1TB. But I can see how I might need even more in the future (depends if I delete stuff or not, which I'd prefer not to).

Currently, I'm just plugging in externally via USB to my htpc/file server. But in the future, if I need more storage, I would either need a multi-bay external drive enclosure (like a Drobo or somethinig) or maybe even some type of NAS device. What are your thoughts on the best overall way to do this? I'm thinking maybe a NAS would be best. If so, any recommendations on which ones? If I just go with an multi-bay external drive enclosure, is drobo worth the cost? i've heard mixed reviews on them, either really good or really bad.

throw the drives jbod into htpc - you could use an esata enclosure. avoid raid unless you have a very controlled environment. subwoofers and storage are not a pretty sight
 
There's lots of ways to serve files. The "best" depends on your background, your experience with PCs, what (if any) surplus equipment you have, and the features you are looking for. Things like disk redundancy, merging of multiple disks into fewer logical volumes, security, and recoverability in case of failure are all factors in considering what's best for you.

If you have a six- or seven-year-old PC laying around, you could put the 1 TB and 2 TB disks into it and install Windows Home Server for $100. That'll give you shared folders that use the combined capacity of all your disks, let your enable folder-level disk redundancy if you want it, and allow painless addition of as many other disks as you can cram into your PC case (or attach externally using USB, Firewire, and eSATA connections).

WHS installation and configuration is simple and there's lots of documents and videos (Youtube) describing how to do it.

You have a file server in your sig. Add drives to it. Share them over the network.

I'm not sure what you're asking maybe. But really, you have a file server so what's this even about? Stream to your HTPC via network.
