My classes were done for the day at 1 and I've done all my work for the day, and now I'm bored and in the mood to cook.

I'm looking for some good, easy dishes to make for dinner. I'm planning a trip to Superfresh/Whole Foods later on, so I can always pick up some miscellaneous stuff if needed.

Right now, I have the following ingrdients in my cabinets/refrigerator/freezer:

~ 2lbs ground meat
~ 6 chicken breasts
- lots of fresh garlic
- several boxes of pasta
- olive oil
- salt/pepper
- bacon

I like a lot of different kinds of food and I'm open to try pretty much anything. As of right now, I'm in the mood for something spicy or something with a sauce, or both. Any suggestions? Again, I'm allowing some time to head over to Superfresh and/or Whole Foods, so if there's a good dish I can always get some stuff.

That sounds pretty good. Thanks for the suggestion!

When I'm broke, I thaw frozen fish fillets, sop in EVOO and soy sauce, bake, pan fry briefly and eat over white rice.

Moderately tasty, quick and cheap.

Thanks for the suggestions everyone. I made my Superfresh run and got some stuff, and I'll be making chicken carbonara. Let's hope it turns out well.

1 eggplant.
cut eggplant into slices, maybe .5 - 1 inches thick or so.
crack 1 or 2 eggs, whip w/ fork add salt + pepper, seasoning (i've just used whatever we've had around...oregano, "Italian seasoning" etc).
dip eggplant slices in egg
olive oil in pan.
fry the eggplant slices until they are tender. i just use a fork if it slides in easily, they are done.
put in a baking dish
after cooking all eggplant slices, pour a half jar or a whole jar of pasta sauce on top of the eggplant. Your call here.
add some Parmesan cheese on top. put in oven at 350-ish and just bake until the cheese melts or the sauce starts to boil a little. usually ~10 minutes.
done, easy & really pretty tasty.

we added some mushrooms with the eggplant the other night and that was good for a change.

oh yeah, boil some pasta with it.
