As for a joystick, I reccomend any of the older microsoft sidewinder joysticks. I was a chopper pilot in the first season of CAL BF2 and microsoft precision pro is excellent. The newer ones are running pretty expensive.
As for headset I would go with anything plantronics, I personally use the V.90 set and its awesome, only flaw is the cord is really long which can get tangled up. the DSP-500 is very awesome as well few steps up from the v.90
