I'm not sure if all his albums are strictly instrumental, but check out Steve Vai.

Tangerine Dream's Rockoon album has some nice guitar work on it for being an electronic band.

Not all tracks are guitar layden but Ozric Tentacles has some killer guitar work. All their albums are instrumental. Try Jurassic Shift or Become The Other.

Djam Karet are a great instrumental rock/prog rock band. You can get snippets of their songs from thier website & some entire songs too(last i looked).
