We've had pretty good luck roasting the turkey but using the plastic cooking bags to cook the turkey in. It made it juicer than normal. It also made the clean up easier. I'm thinking about trying the brine soak tonight. Do you have to use Kosher salt to make the brine solution? I'm not Jewish if it matters.Went and found it myself, if you use regular table salt in the brine solution use half as much as your would Kosher salt.
