LOL This is the first time for me, making a turkey dinner. I plan on sticking that bird in the oven and hitting bake! :p

Sorry I am not of more help. I actually plan on calling my mother about every 5 minutes with yet another stupid question. :)

Good Eats Roast Turkey is THE recipe.

Alton Brown. That should say enough.
I altered the brine to because I didnt have everything, but followed the technique. Now people invite me to their home to cook turkey.

LOL...Don't worry Mrs. Skoorb. I'm sure if you had a laptop (HINT HINT) you could look at all the different recipes from your kitchen counter....maybe even chat with your mom whle you prepare your turkey. I've made turkey dinners for the last 3 years...so far the score is: Oven: 3 .... Me: 0. The oven temps play tricks on me. Good luck cause I know we're gonna need it!!!

Deep fry that turkey only way to go
less time
never dry
less to clean
and if you inject the marinades it really ads to it

One tip of advice. Don't cook the stuffing in the turkey! That can lead to bacteria and make everyone sick. Cook the stuffing outside the turkey, and only put aeromatics inside the turkey!

Drunken Turkey~

soak 2 cheese cloths in Wild Turkey(Bourbon)
Scrunch up 1 cloth and put it inside the cleaned out cavity of the turkey
Spread the 2nd cloth over top of the whole turkey
Chill in fridge for 24 hrs.

Take cloth that's over top turkey off
Season with olive oil and favorite seasonings
leave the bourbon soaked cloth inside the cavity of turkey
Bake according to weight of bird.
Marinate every hr. on the hour! (This is key!)

Take out the cloth inside the turkey and serve!

We've had pretty good luck roasting the turkey but using the plastic cooking bags to cook the turkey in. It made it juicer than normal.
It also made the clean up easier.

I'm thinking about trying the brine soak tonight.

Do you have to use Kosher salt to make the brine solution? I'm not Jewish if it matters. ;)

Went and found it myself, if you use regular table salt in the brine solution use half as much as your would Kosher salt.

Table salt has anti caking ingredients. You can use it, but it is not as good.
