I rented this DVD and watched the featurette for the Puerco Pibil that Depp was so fond of. Now that I want to cook it however, i realized my roomate took it back! Does anyone have the recipe from that DVD or would perhaps be kind enough to grab it and share??? Thanks!

BTW those extras were awesome (much better than the movie), I love the way the director put everything together.

Do you mean cochinita pibil? that is what I know it as.

Here is how I make it:
Cook a pork roast or loin or shoulder in enough water to cover with a few cloves of garlic, a bay leaf and some salt until very well done. Remove and cool, retaining broth. Remove bay leaf and discard.

When the meat is cool enough to handle, shred it by hand. Slice up an onion and cook it in oil until soft but not totally transparent.

Make a paste with achiote seasoning, the juice of several naranjas agria (which is 'sour orange', if this is not available use regular orange and a little vinegar.) and some of the broth. Add more broth until you have a good amount of sauce, season with salt and cook until it thickens a bit, add the meat back in and the cooked onion and let simmer so the flavors mingle.

Serve with fresh corn tortillas and white rice with capers.

wow, that sounds good. Thats not exactly what he cooks up, his is more of a pork butt roast thats seasoned with achiote, cumin, cloves, garlic, tequila, orange juice and a bunch of other things. all this gets wrapped up in tin foil and roasted for over 4 hours.

i know a lot of the recipe, its the exact quanities i'm lacking. however, if i can't get them, i'll follow your recipe tomorrow!!

sounds like you could just wing it. The additional ingredients you mention all sound very interesting, I might try throwing in all or most next time I cook this! THe wrapping it in foil part sounds like another dish I have tried... all this talk is making me hungry tho...;)

i just saw this movie last night, seriously....and i must say i thought it sucked

and didnt have enough salma hayek :(

Yeah, I got it with a bonus: the second one for $1 more (BB DVD hot deal).

If you can really call it a bonus, I guess Salma Hayek is the only thing that makes it worth it.

Got the bonus disk, recipe looked awesome, mix the spices in a coffee grinder, put the pork on top of banana leaves and roast it for 4 hours

Those of us that like Big Hoo hoo's...Personally I wouldn't kick either one out of bed.
