Recipe for Fondue or Queso Fundido with Mozzarella Cheese?

Mozzarella Cheese gets cheap at Costco occasionally. It's that time again with 6 pounds for $9.99. My fondues usually get expensive, they aren't made with mozzarella. But with cheese at this price I'm thinking there must be some good recipes.

Explanation: Queso Fundido is a Mexican Dish where cheese is baked in an oven in a dish with meats or spices. You dip things in it like fondue.
fondue = double boiler
queso fundido = baked in the oven

I hate using mozzarella in my fondue. You sit there and twirl the fvcking stick for HOURS :| :| :|

I use Cheddar, some random other cheeses and pour a little bit of lager into it.
