Receiver and Xbox One questions

So, I am thinking about getting myself a home theater system for Christmas (separate parts, not HT in a box) and was wondering about receivers and the best way to go about connecting the devices.

Currently, connected to my TV is an Xbox One and a PS3 (eventually PS4, when it gets some games I want). Possible additional things will be connected, but unlikely though will "require" use of the system, such as I don't care if an old Xbox 360 doesn't have surround. My cable box is connected to the Xbox One and will stay that way (I love the features it offers). What is the best way to go about connecting these? Should I go with HDMI passthrough? Or optical out from devices?

Anyone have experience with such? I haven't decided on which receiver or speakers (going with at least 7.1), and this information will help me determine inputs I require.

I have my Xbox One connected to an Onkyo receiver and have it setup to turn on and off when I use the "Xbox on" voice command. Turns on my TV too. Works well.
