Recalibrating temperature monitors?

I am having an odd problem. AIDA32 says my CPU temperature is at a temperature between 70 and 80 degrees celsius, and when I enable Folding @ Home, my computer quickly shuts down because of the supposed increased temperature. I felt about halfway down the heatsink when the CPU temperature was supposedly about 80 celsius, but I didn't feel anything aside from warmth (I figured anything over 60 celsius would at least burn a little bit). I am running a pally XP 1800+ with a Volcano 9 and AS3. I mean, I may have incorrectly installed the CPU grease (I am quite meticulous though) but I figured it would feel quite hot. Before I disable the auto shut down, I figured I would ask here if I can recalibrate those sensors to read correctly, or if I should do some sort of test to ensure my CPU isn't really running that hot. Would a CMOS reset do anything? Thanks.

Hmm, that's an odd problem you have there, have you tried re-installing the heatsink? It may have been lifted off the processor a little bit and is causing a lack of heat transfer.

Well, I just took off the heatsink, cleaned off the heatsink and CPU, reapplied AS3 in a thin layer, and tightly attached the spring clip. The temps are worse if that's possible.

All I can say is N00B3D! The heatsink wasn't making contact with the CPU. I installed a Vantec Aeroflow, and now I have 42 celsius temps on 100% load, and it is saving my ears.
