In a pinch, could you use a set of component cables, as composite RCA cables or would just totally F-up?

Component and composite+audio cables can be interchanged freely as long as they don't really suck, they are essentially the same cables with different colored tips.

Like instead of using Red, White, Yellow cables for the Red, White, Yellow sockets, you instead use the Blue, Green, and Red component cables for the Red, White, Yellow sockets.

no. those are audio cables with a video cable. sure you can use it in a pinch.

compisite/component video = 75 ohm coax, preferabbly high bandwidth.

the red/white cables = you have no idea what they are. Sure it will work, but maybe not as good as it could be.

-edit-
I read it backwords too. A set of component cables will work just fine for composite video with left and right audio.
