ah so

Ramen
Not to be confused with Lamian or Instant noodles.

Ramen (ラーメン rāmen?, IPA: [ɽäꜜmeɴ]) is a Japanese noodle soup dish. It consists of Chinese-style wheat noodles served in a meat- or (occasionally) fish-based broth, often flavored with soy sauce or miso, and uses toppings such as sliced pork (チャーシュー chāshū?), dried seaweed (海苔 nori?), kamaboko, and green onions. Nearly every region in Japan has its own variation of ramen, from the tonkotsu (pork bone broth) ramen of Kyushu to the miso ramen of Hokkaido.

You're missing out on a lot if you have to pick 1 to represent China. Just to list a few:

Taiwanese beef noodle soup http://en.wikipedia.org/wiki/Beef_noodle_soup
Lanzhou la mian http://en.wikipedia.org/wiki/La_mian
Cantonese beef chow fun http://en.wikipedia.org/wiki/Beef_chow_fun
Cantonese wonton noodles http://en.wikipedia.org/wiki/Wonton_noodles
Shaanxi biang biang noodles http://en.wikipedia.org/wiki/Biangbiang_noodles
Szechuan dan dan noodles http://en.wikipedia.org/wiki/Dan_dan_noodles
Shanghai fried noodles http://en.wikipedia.org/wiki/Shanghai_fried_noodles

I honestly can't pick between some of these. They're all different but good. It is true though that authentic/good representations for a lot of these are not available in the US.

Good question actually... I imagine they would. Do they have the bowls split in half that lets you get both dishes in one order where you go? Thats the best!

There are plenty places that will do half and half but I always found these places subpar. The place I frequent only serves the full bowl which is fine by me. I prefer full bowl of spicy jjamppong.

Vietnamese has so many ass kicking soups, it's difficult to pick one. There's all kinds of Pho, then all kinds of bun... Too beaucoup.

You guys do. Good bowl of Pho > good bowl of ramen. Yet, you have hipsters putting ramen up on a pedestal because of the popular media. Vietnamese cuisine is so underrated.

What are you talking about? I've never seen ramen talked about, well not around here anyway. I hear people raving about Pho way more often; around here I would call Pho the hipster dish of choice. Damn places have popped like flies around here.

Are we focusing on just the noodle? Non-packaged ramen noodles or spaghetti noodles are both pretty damn good when they're both slightly chewy. However as a complete dish, I would take a good shio ramen broth over any pasta sauce.

Edit I saw jjajangmyun mentioned above. That's freaking good too, it would definitely be my #2.

Pho. not so much because of the noodles, but because the entire package is the best thing ever.

I ate ramen twice.
It's okay but they're clearly not like italian pasta, they're more liker a filler that takes the taste of whatever soup is around them.

Pro-tip: what americans call italian cuisine, is not italian cuisine. It's italian-american cuisine. Some of that stuff doesn't even exist on this continent.

Ketchup and Noodles

ITT: people that don't know shit about asian noodles

Ramen - numerous regional differences exist here. my personal favorite, Sapporo:
miso-butter-corn-ramen1.jpg

Pho - one large regional difference (north vs south), with south being the more popular variant.

north (aka pho bac). and yes, it is supposed to be a lighter color. if your pho is dark and murky with random looking powder in it, congrats you just ate instant pho broth.

chinese noodles - what the fuck is this chow mein shit. the chinese have their own version of beef noodles (This particular beef noodle dish is incredibly popular in taiwan)

The chinese noodle soups expand GREATLY if you include all the various chiu chow noodles. And see this previous thread regarding chow fun mastery:

What about those Tung Kee Noodle House noodles. I like the noodles and fish balls, or the beef balls.

But I would take ramen with a good broth and toppings over anything. It would probably be my last meal if I was on death row, especially if it was from Halu.
